SCOPE
This specification applies to fresh or frozen kidney, liver, heart and tongue from beef, calf, lamb and pork carcasses. The organs shall be delivered fresh or frozen. The tongues rnay also be supplied cured. This specification is intended to be used by food services in procurement of food.
